A montage of private and open spaces let you choose your own adventure. Think pop up basement bars, cocktails on tap or a vintage Absinthe fountain surrounded by the comfiest chesterfield lounges. This three-tiered bar has been designed to explore.
The food, courtesy of Marco Miguel is inspiring, rustic and focused on quality ingredients. It's food that you can come to eat with friends and family, sharing in the experience of the flavours and cooking techniques. Rotating seasonally, the menu is curated by quality. Marco harps back to the basics and delivers paired-back food with a delicate twist. We encourage you to indulge in our Chefs Menu or sample a variety of dishes from the menu.
The Noble Experiment has one of the largest collection of bottle and barrel aged cocktails in the country. These are lovingly managed over months to smooth out the flavours of your favourite booze. If whisky is your tipple of choice, owner Daniel Lemura and his team will satisfy your penchant for unique and obscure whiskies from Australia and around the world. French champagne, local vino and interesting craft beer will also satisfy the most discerning of palates.
The Noble Experiment has three distinct spaces. Upstairs is a quaint and intimate cocktail bar perfect for private drinks, the ground level restaurant is an ambient space for groups big and small, and the basement is a bit of a chameleon; used for innovative functions and semi-permanent installations.
