His understanding of melding flavours and ingredients is all but revealed in his cooking and his enthusiasm for organic and wholesome cooking is refreshing and inspiring. Toby is happy to discuss the nuances and preparation of the dish with happy customers and revels in the discussion of produce and their unique origins.
